I wanted to come back and post that this was the best gumbo yet we've made. Nice and rich & thick which is a feat considering its gluten-free. It has 7 different greens in it and 5 different kinds of meat... simmered in the pot for 8 hours or so. Happy New Year! Enjoy the gumbo z'herbes pictures..,

Murky muck
I cannot wait to dive into this murky swampy green pot of gumbo z'herbes we got simmering down for New Years!
It's labor-intensive and involves 7-11 different types of greens and 5+ different kinds of meat so is usually reserved for special meals.
It should bring us luck and prosperity if all the greens count for something!
This is Leah Chase's recipe with a few tweaks from Sara Roahen she shared with me. Gotta love having wonderful foodie writer/chef pals.
We made it once before back in our New Orleans days. This is our inaugural Cali green gumbo. Smells like heaven. Can you almost smell it through the screen?
